Good things come in threes: tropical bistro Três pays homage to its Terceira Island locale through Azorean ingredients and recipes. The menu showcases small sharing plates and, in keeping with the theme, chefs suggest you opt for three dishes and try a bit of everything — oven-baked rice, garlic-butter limpets and slow-cooked beef are for-the-table favourites.

Of all the natural elements, Botaniq Cocktail Lab is definitely earth. It’s kitted out in exposed stone, tactile furnishings and big palm fronds, and true to its name, mixologists here distil local herbs and plants into every signature cocktail. 

Last orders

Breakfast is 7am to 11am. Três opens for dinner from 7.30pm to 11pm, Wednesday to Sunday. Botaniq pours from 11.30am to 11pm daily.

Worth getting out of bed for

Torel Terra Brava takes its cues from nature, and that ethos extends to its adventurous offerings. Connect with the earth and local producers on a winery tour and tasting, cooking workshop or visit to an artisanal honey supplier. Staff can also arrange Jeep tours of Terceira Island’s lush interior; private geological tours of its volcanic caves and rock formations; or seasonal viewings of the Tourada à Corda, a series of historic street bullfights over summer. Take to the skies with paragliding, or to the water with snorkelling, whale- and dolphin-watching (possible year-round, but April to October are your best bet for sightings) or Atlantic Sea fishing, preparing your catch for a traditional Azorean lunch.

In contrast to its low-lit interiors, the food at refined Mercatto di Osteria shines. Its seasonal menus lean into classic Italian flavours, lifted by locally sourced produce and Azores-grown wine pairings. Tasca Das Tias offers regional favourites and fuss-free cooking in a traditional setting with plate-adorned walls, stone archways and wooden furnishings. Carnivorous cravings are sated at Lume with its grilled, on-the-bone steaks and chef’s suggestion of suckling pig.

Head to Melita for cosy café brunches of caramelised banana-topped granola bowls and avo sourdough toast, alongside strong or sweet brews.

If Earth, Wind & Fire ever find themselves in the Azores, we think they might like Torel Terra Brava. This set-back-from-the-Atlantic boutique hotel looks to the same elements as the band’s name (plus water) to define its design, activities and culinary offerings. 

The tempo here is a little slower than their disco hits, but the tune spun by Torel is catchy all the same: a love for all things Azorean. Each bedroom is named after a natural feature found nearby, and the hotel’s Três bistro and Botaniq Cocktail Bar each spotlight local flavours and recipes, putting the brand’s characteristic modern spin on tradition.
