Our favourite rooms

The thought that has gone into all suites is testament to Kat’s eye for detail and none will disappoint. If a balconied room is your priority, opt for Emerald or Ruby. On the top floor, Sapphire and Paraiba come with high, vaulted ceilings and a tucked-away feel. Three-bedroom Diamond House, with a private garden, outdoor hot tub and several spaces to lounge, indoors and out, has been designed with groups of friends in mind.

Spa

Bathrobes on, you only need head down to the courtyard at the main hotel to enjoy the use of its Nordic spa area, where you can fine-tune your bathing ritual with spells in the sauna cabin, hot tub and cold plunge; a lounger-edged fire pit is your alfresco relaxation space. If you’re staying at Diamond House, you’ll find a hot tub on the terrace and a fire pit in the garden for your exclusive use.

Packing tips

The hotel’s cozy nooks lend themselves to quiet downtime — for getting engrossed in a good page-turner of a novel, or bingeing on episodes of your favorite podcast. You’ll also need to bring along some excellent self-discipline, if you’re to part company with chef Marc’s exquisite patisserie.

Sustainability efforts

At Kat Florence Hotels, single-use plastic is kept to a minimum; bath products are either full size and refillable or encased in aluminium, and its supply chain is curated with recyclable packaging in mind. Many of the furnishings at the hotel are vintage, rather than mass-produced. Energy-efficiency measures, such as the use of LED bulbs throughout, are in place. And links with Elora's community include a considered local focus in its concierge listings and the hotel’s private-dining collaboration with chef Anthony Bish.

Breakfast in bed, or on your balcony porch (if you’re on the second floor), is the finest of day-starters.

Dress Code

The sense of occasion that accompanies chef Anthony’s tasting menu calls for a little finery for your exclusive evening out; otherwise, you’ll find the ambience inside the hotel has more of a laidback, come-as-you-are feel.

Hotel restaurant

Kat Florence Hotels doesn’t have an on-site restaurant, but a chef’s tasting dinner is offered, as a gift from Kat, with each stay. Tony’s Sourdough Pizzeria by day, the hotel’s neighborhood dining spot (conveniently next door) transforms each evening into Anthony’s Private Restaurant, an exclusive Kat Florence Hotels takeover. Chef Anthony Bish and his brigade craft a weekly-changing five-course menu, showcasing Ontario ingredients, as well as Bish’s prowess with pizza. Otherwise, expect an innovative, largely Italian line-up.  

The fine aroma of baking bread is proof that chef Marc is at work: each day, the resident pastry chef whips up baskets of artisanal treats, loaves and house-churned butter, whisked to your door for breakfast in bed. His ‘edible art’ patisserie tempts with delicate tarts, cakes and cookies all day long in the lobby living room, too.  

Hotel bar

At the main hotel, a staffed coffee bar in the living room is your go-to for daytime refreshments before 'Martini Service' and Veuve Clicquot by the bottle takes over. With a fridge — possibly even a dedicated wine one — in your suite, there’s also nothing to stop you prepping for drinks chez vous.

Breakfast is brought to your suite or the Diamond House by arrangement with your personal concierge at a time of your choosing.

Around 90 minutes by car from Toronto and a popular weekend destination, Elora is a historic riverside village in Centre Wellington that garners superlatives for its good looks and quaint architecture.

Planes

International arrivals touch down at Toronto Pearson International, an 80-minute drive from the hotel. For domestic routes, Region of Waterloo is a closer 35-minute drive. Staff can arrange private transfers from either terminal in advance, on request; price on application.

Automobiles

For short sojourns, Elora’s highlights are step-friendly and the hotel’s car service will suffice. To explore this riverine pocket of Ontario independently, you’ll want a set of wheels, and there’s free valet parking.

Worth getting out of bed for

A historic village founded as a center for milling in the 19th century, Elora has shrugged off its industrial past, leaving the Grand River, Elora Quarry and Elora Gorge as its pastoral legacy (with a designated conservation area) for fishing, swimming and tubing in summer. Bridges across the river at times are more like photographers’ platforms, but hiking trails along wooded banks, passing babbling shallows and rugged cliffs, reveal there’s no shortage of grid-worthy vistas around town.  

Your base at Kat Florence Hotels puts you in the heart of Elora, in a neighborhood of one-off boutiques, galleries, bars and cafés. Request a driving tour in one of the house cars for step-free highlights. Staff can also arrange pottery workshops, baking classes and distillery or brewery tours with tastings.  

Local restaurants

Floor-to-ceiling windows beside the river give Elora Mill Restaurant a picturesque edge to accompany its culinary celebration of European cuisine and Ontarian ingredients. At The Evelyn, Italian and French plates, such as herb-flecked escargots, braised beef gnocchi and trout almondine, star and are expertly paired with wine.

Local cafés

Across the street from Diamond House on Metcalfe, Community Coffee Café has a chalkboard menu of light bites, sandwiches and bakes, as well as hot drinks and smoothies. Classic sandwiches, homemade scones and muffins may reel you in at The Lost + Found Café but it’s the expertly brewed coffee you’ll go back for.

Jeweler and Elora native, Kat Florence originally overhauled the 1848-built Commercial Hotel in her hometown as a luxury escape for her discerning clientele. But these days you don’t have to own one of Kat’s collectible treasures to gain access to these sumptuous suites, aka adults-only Kat Florence Hotels.  

The jewelry doyenne has lovingly kitted out four apartment-like suites and a standalone three-bedroom cottage in designer furnishings and high-spec appliances, with hand-picked art and generous space to lounge, indoors and out.
