Given your arcadian Catskills locale, it’s only natural to crave as much of that oh-so-fresh countryside air as possible. For that reason, the Neversink King with Private Patio takes top scores for its furnished, alfresco space. If you’re looking for a little more freedom to roam (and lounge), the sprawling Hemlock Grand Suite, with its east- and west-facing sundecks, will be your ideal match.

Poolside

You’ll find the hotel’s indoor heated pool at the spa, edged by rattan porch swings and garden-surveying sunloungers.

Spa

Kicking back is in Hemlock’s DNA, and the mind-quieting spa (open from 9am to 7pm) shows just how seriously they take serenity. The space itself is an enticing blend of oak wood ceilings, cushy sofas and calming relaxation areas. There are 12 treatment rooms, where masseurs perform their signature Detoxifying Water Ritual (which includes a full-body exfoliation, clay wrap, mineral soak and deep tissue massage), among other restorative options. And you’ll have access to the hot tub, sauna and steam room.

Packing tips

Ditch the gumboots, and pick up a pair from the Barbour-laden boutique, leaving space for all the crafts you’ll create along the way.

Sustainability efforts

Hemlock Neversink puts sustainable measures at the forefront of its ethos. Furnishings are all one-off and crafted by local artisans from natural materials; blankets and throws are sourced from the eco-friendly folk behind In2Green, and all energy is harnessed from a nearby solar farm. The limited light pollution has also earned the hotel its DarkSky certification. When it comes to the restaurant, chefs plan their menus to minimize food waste and work closely with the Catskills-based charity, A Single Bite, to ensure low-income families around the county have access to nutritious meals.

Hotel restaurant

A comforting scent of freshly baked loaves, cakes and just-brewed coffee wafts from the chalet-like dining room at Bittersweet restaurant. Plant-based dishes take center stage at this seasonal joint for their locality, and menus change daily depending on what’s ripe for harvesting. Lunch tends to be laidback, with surprisingly filling soups and salads on offer, before multi-course dinners bring a slightly more formal tone. Each evening starts with ‘snack from the kitchen’, followed by glazed mushrooms, cauliflower steaks, stuffed, smoky peppers, lake-fresh fish, and finished with caramelised fruit. Between meal times, you’re also welcome to stop by for light snacks and drinks.

Hotel bar

There’s no formal bar, but there are plenty of craft cocktails, wines and locally made beers to pick from at the restaurant. We’d suggest sampling the ‘Single Bite’, a well-loved concoction that packs a punch and donates all proceeds to its namesake charity.

Last orders

Breakfast is served from 7.30am to 10am; lunch is noon to 2pm, and dinner is between 5.30pm and 8pm.

Hemlock Neversink sits in its namesake town in New York State’s Sullivan County, in the northern Catskills Mountains.

Planes

The closest international hubs are Newark, LaGuardia and JFK — all between two and three hours away from the hotel by car. If you’re coming from within the States, Hudson Valley’s Stewart Airport is a slightly closer 90-minute drive. Sullivan County has its own private airport, which is around 25 minutes away. Private transfers can be arranged from most airports for an additional charge.

Trains

The closest train station is in Middletown, a 45-minute drive away, which sits on the Port Jervis Line and has connecting options on to NYC.

Automobiles

A car comes in handy around these more remote ends; there’s free parking at the hotel.

Worth getting out of bed for

With 230 acres of space to play around in, and a personal co-ordinator tailoring your itineraries, you’ll find little need to leave the campus. Get to know your fellow residents with a visit to the hotel’s goat farm, where local rescues are on hand for therapeutic walks and healing petting sessions. If you prefer taking your hikes without a furry friend in tow, there are five miles of trails around the property and guided forest bathing is available for anyone wanting to be even closer to nature. 

Find your calm in the gardens, potting and planting with in-house experts; or, get crafty with natural dye, crocheting, painting, mosaicing, print- and candle-making workshops. There are tennis courts for those who’d rather detach with a match, and the hotel’s low light pollution means it is DarkSky-certified, making it a prime star-gazing spot come evening.
