Duck into Vinilos Records to flip through stacks of timeless vinyl, then wind down, wandering the cool corridors of the Palacio Marqueses de la Algaba. For more Mudéjar architecture, seek out Casa de Pilatos, a 16th-century palace that stitches together Gothic, Mudéjar and Renaissance styles through tiled courtyards and Roman bust-lined marble halls.

Cañabota puts seafood centre stage, with glistening fish laid out on the chef’s table and cooked simply to let the flavours shine. Casa del Tigre leans into bold Andalusian cooking — grilled meats, seasonal vegetables and rich sauces — served in a space that feels more like a chic gathering spot than a formal dining room. Cristine Bedfor has always had a flair for the dramatic; first a whimsical house in Menorca, then a storybook mansion in Málaga, and now, the stage lights rise in Seville. Set in Aníbal González’s made-over-Mudéjar building on Calle Amor de Dios — once a theatre, an academy of fine arts, and a flamenco school — Cristine Bedfor Sevilla carries echoes of every role it has played.
