Our favourite rooms

Past meets present at Castilla Termal Brihuega, a former textile factory with original features, such as inscriptions, stonework and wooden beams, that are paired with contemporary furnishings. If your neck starts to ache from staring up at the sky-high ceilings in a Junior Suite, a soak in its freestanding bath tub should do the trick; the Suites are spacious but have a cosy feel with their vaulted dark-brown beams.

Poolside

Set in the wellness area, the hydrothermal pool is a modern take on Roman-style baths, with exposed-brick walls, stone archways and bright skylights. It’s a space designed for sigh-releasing relaxation with in-pool hot tubs, jet areas and water walls. In summer, a second garden-set pool opens for alfresco lengths that overlook the terracotta-tiled village and surrounding countryside.

Spa

You could get a quasi-massage in the pool on one of the in-water jet beds, or book in for the real deal at the spa, where signature therapies soothe with organic balms and oils. The 1750 treatment nods to the hotel’s textile factory heritage, weaving in traditional fabrics to wrap and stretch the body; the lavender field ritual infuses the region’s fragrant herb into a scrub, body wrap and volcanic-stone massage.

There’s a sense of bringing the outdoors in at the sprawling, glass-dome-topped La Redonda — the hotel’s showstopping space with its circular set-up, lantern lighting and central tree-sprouting bar. It’s an all-day space for bright breakfasts (a buffet spread hugs one side with super-local produce, a cold-brew station and homemade sweet treats), lingering lunches that roll into aperitivo hour and, before you know it, a suitably Spanish dinner. The cheese board spotlights close-to-home varieties and the house special of goat cutlets with padrón peppers is served on one of the factory’s original terracotta tiles. Dinner-only Spinners adopts a similar approach to cooking: traditional recipes are given a modern makeover with seasonal ingredients and delicate plating.

Hotel bar

You’ll find locally produced bottles at La Redonda’s bar, but the hotel’s own tempranillo, Converso, feels only fitting. Bartenders shake up classic cocktails, though the line-up of vermút, Mahou beers and Spanish spirits are justified ways to experience cultural immersion. In summer, a poolside bar mixes up spritzes and snacks, with views over Brihuega.

Last orders

At La Redonda, breakfast is 8am to 11am, and an all-day menu and drinks are served between 1.30pm and 11pm. Spinners opens on Fridays and Saturdays, from 8pm to 11pm.
