Setting

Secret-garden estate

Borgo Pignano Florence aspires to be a city stay — and technically is, sitting in the hills on the outskirts of Florence — but hasn’t quite dug up its roots. It follows the flower-strewn path laid by its Tuscan sister stay, which has built its appeal on the classic Italian promises of food from the earth, wine from the house vineyards and timeless verdant scenery. Simple pleasures, if luxuriously done. In Florence, the group stays green, having secured five acres of gardens, orchards and ancient trees, to wrap you up in bucolic bliss after cosmopolitan days out.

Need to know

Rooms

32, including 14 suites, set in the main house, a villa and annexes dotted across the estate.

Check–Out

Noon, and check-in is at 2pm. Both are flexible, on request and subject to availability.

More details

Rates include a breakfast buffet and à la carte dishes.

Also

The hotel has some accessible Deluxe Garden rooms with widened doorways and roll-in bathrooms, but there are cobbled stretches around the grounds that might be hard for those with limited mobility to navigate.

At the hotel

Gardens, orchards, concierge, charged laundry service and free WiFi throughout. In rooms: smart TV, USB charging ports, air-conditioning, minibars, free bottled water, Nespresso coffee machine, tea-making kit, bathrobes, slippers and custom bath products.

Our favourite rooms

In keeping with the ‘country stay goes to the big city’ feel, each room is named after a flower or plant growing in the gardens: Lavender, Iris, Rose… Cedrus the cedar gets a look in, too. However, don’t expect rugged wood and hempen accessories, the look here is sleek and chic, with custom furnishings, fine art and fabrics from Venice. But getting into the green is the point here, so any room or suite with a garden will serve you well. For multigenerational trips or group gatherings, the standalone Villa La Sosta sleeps 10 and can be decadently customised with private-chef dinners and wellness itineraries.

Poolside

The hotel’s ample grounds allow for a 30-metre heated pool (open 10am to 7pm) — one as verdantly picturesque as Botticelli’s Primavera. Loungers and parasols are laid out along the sides and there’s a bar a few wet footsteps away.

Spa

Treatments in the Aromàtica Spa, in the main villa, combine the wholesomeness of plants and flowers from the Borgo Pignano farm with the unbridled decadence of the Medici (wellbeing tips were lifted from the monied historic family’s botanical manuscripts). Add a thermal circuit that includes a sauna, Turkish bath, sensory shower and ice fountain, plus couples' rituals, and you’ll surely leave smooth as a Michelangelo marble, as glowing as an altarpiece and as soft and pliant as a fine leather glove. The workout space is well-equipped with Technogym kit, or take your exercise alfresco, with yoga sessions in the villa’s secret garden or under the shade of Cedrus, the grandfatherly cedar of Lebanon tree, or mindful walks in the Florentine hills.

Packing tips

Save some space for beautiful homegrown products from Borgo Pignano's rural Tuscan sister stay. These range from grains, pastas and sauces to botanical-print silk scarves, oils, soaps and wine.

Also

The hotel’s garden is high yield indeed, with orchards of pomegranates, persimmons and medlars, alongside cedar avenues, parterre, grand fountains and water wells.

Pet‐friendly

Up to one dog is welcome (for a one-off fee of €100) to stay in a room with garden space or a suite. See more pet-friendly hotels in Florence.

Children

Bambini are welcome to stay (charged as adults from age 11 and up). Several rooms and suites have sofa-beds, the spa offers gentle treatments for kids (from five years old), and staff can arrange babysitting when booked 24 hours in advance.

Sustainability efforts

The hotel has made some conscientious moves: fitting water-saving devices in rooms, sourcing 60 per cent of energy from renewable sources, using ingredients and bath products from its own sustainably run farm, and hiring locally.

Food and Drink

Top Table

If staying in Villa La Sosta, ask for a private chef to whip something up for dinner on the view-blessed terrace.

Dress Code

You needn’t go full nymph, but botanical prints or earthy hues might not go amiss.

Hotel restaurant

Handily, Borgo Pignano Florence’s Tuscan sister stay has its own organic farm, which keeps the restaurants here flush with regional bounty. Dark-wood-and-maroon Essenza revolves largely, and leisurely, around rotisserie cooking, with the likes of deer saddle, Chateaubriand steak or sweet potato carved tableside. Named for one of the garden’s oldest trees and set on a panoramic terrazza, Cedrus has a Mediterranean menu focused on fresh fish. Max’s Bar will please pescatarians even more, with generous seafood platters; and laid-back, seasonal Oscar’s (open April, May, September and October) is your spot for pizza and prosciutto toasties.

Hotel bar

Cedrus’s wine list maps out Italy’s major bottling regions, but highlights indie producers too. Its alfresco setting is just what you picture when you think of an afternoon spent idly sipping. Max’s Bar has a masculine, throwback feel with wood panels and vintage sports posters, but its signature cocktails take a softer tack, inspired by Florence’s gardens. Try the Giardino delle Rose with rose-infused vodka, raspberry and lemon. The drinks at Oscar’s Pool Bar, which is framed by the olive groves on Montughi hill, take the broader theme of ‘water’, which translates to drinks such as the Fontana dell’Oceano, with mezcal, Acqua Bianca, Curaçao, lavender and citrus.

Last orders

Essenza serves breakfast from 7am to 10.30am, lunch from 12.30pm to 2.30pm and dinner from 7pm to 9.30pm; Cedrus serves lunch from noon to 2.30pm and dinner from 7pm to 9.30pm. Oscar’s pours from 11am to 7pm; Max’s till midnight.

Room service

Available around the clock.

Address
Borgo Pignano Florence
Via Bolognese 89
Firenze
50139
Italy

Borgo Pignano Florence sits just outside the Renaissance city’s centre, at the northern edge, in a residential area hidden on the Montughi hillside.

Planes

Florence’s Amerigo Vespucci airport is just a 20-minute drive away, and staff can arrange transfers on request. Or you could touch down at Pisa International, a 90-minute drive away.

Trains

Santa Maria Novella train station is just a 10-minute drive away, should you want to travel between Italy’s grand cities by rail.

Automobiles

Florence’s hills are a little outside of the historic centre — around a 20-minute drive — so a car may come in handy, even if parking drives you as crazy as 15th-century ‘mad monk’ Savonarola. Things go more smoothly at the hotel, where there’s free valet parking, allowing you to extend your reach into the Tuscan wilds.

Worth getting out of bed for

Borgo Pignano Florence’s experiences take you behind the scenes of the city. Tour private art collections in usually off-limits palazzi. Go backstage at the Teatro del Maggio Musicale Fiorentino to see how its spectacles come together before watching a show and meeting the performers. Wander wisteria tunnels and Baroque staircases in the Boboli and Bardini gardens. Delve into the craft scene: see the frescoed Brancacci and Filippo Strozzi chapels for inspiration in the ensuing art class, paint your own majolica plates, blend your own scent at the Antica Spezieria herbalist and take an ‘olfactory tasting’ at Villoresi Museum. Or get schooled in Renaissance jewellery styles at art-conservation centre Opificio delle Pietre Dure before making your own. Plus, there are chances to hone your calligraphy and floral-arrangement skills.

You can take cooking and mixology classes at the hotel, but these come with an extra serve of scenery at Borgo Pignano’s rural Tuscan outpost in Volterra (about a 90-minute drive away). Here you can see how they make olive oil, wine and botanical bath products; get hands-on and pick up local know-how in the kitchen or at the hotel’s herbal lab; or embark on a seasonal foraging or truffle-hunting expedition.

Local restaurants

It seems counterintuitive to head further out, but there’s gold hidden in Florence’s hills. Take Terrazza 45, a 10-minute drive away, by Fiesole’s amphitheatre. From the outside tables, Florence is laid out like a map, and dishes (red prawns with lime, gnocchi with scampi) are of the simple yet excellent sort. If you like the hotel’s verdure, try Serre Torrigiani Bistrot, set in the city’s largest private park, Torrigiani Gardens. Eat in a greenhouse-style dining space or all’aperto amid holm oaks, enjoying strawberry carpaccio, swordfish pasta and more. And discover the city’s greener dining scene at vegetarian spot Ora, where eats such as ricotta-and-nettle cappellacci or fennel flan with pecorino elevate a plant-first ethos.

Local cafés

Dating back to 1903, former literary salon Caffè Concerto Paszkowski still feels like a spot for intellectual debate in its art deco finery. By day it’s an elegant spot for a sourdough sandwich or affogato, while blues and jazz musicians play every night. For gelato, My Sugar, close to the Accademia, caters to the cool crowd’s sweet tooth, with modern flavourings such as matcha latte and hojicha tea.

Local bars

B-Roof American Bar overlooks the city’s most important domes and — as a variation on a theme — has tables tucked under a blossoming pergola. And florals are at the fore at Gucci Giardino, where the design was inspired by a historic florist who lived in Piazza della Signoria, and cocktails lean fittingly botanical. Take Un Salto sulla Luna, a blend of pear-infused bourbon, mezcal, carrot, ginger, mandarin and bergamot.

Anonymous review

Every hotel featured is visited personally by members of our team, given the Smith seal of approval, and then anonymously reviewed. As soon as our reviewers have returned from this surprisingly leafy retreat on the outskirts of Florence and unpacked their homemade pasta and botanical soaps, a full account of their touching-grass break will be with you. In the meantime, to whet your wanderlust, here's a quick peek inside Borgo Pignano Florence in Italy…

First, there came Borgo Pignano Volterra hotel in the Tuscan countryside — the backdrop to a dream where you’re wearing floaty linens and carrying a basket of freshly picked flowers as you skip towards an aperitivo, a plate of ravioli and a glass of wine grown mere steps away — and maybe an impeccably tailored man named Luigi; hey, it’s your dream. That pasta is Michelin-starred, by the way, and you’re offered the very fine things in life here, but what this village stay really sold is a vision framed in green and a flowerbed-lined pathway to Edenic living.

Now, like the delicate rosés and fruity whites produced within cork-popping distance of this rustic hideaway, the Borgo group has bottled this magic and brought it to the outskirts of Florence. Borgo Pignano Florence is technically a city stay, but you’ll still feel planted in the countryside, thanks to its five acres of gardens, where prim parterres meet pomegranate orchards; the views of olive groves lining the Montughi hillside it sits on; and a scattering of buildings to evoke that village feel. There are cosmopolitan lures too: the chance to try perfume-making and majolica painting at noted ateliers, and spa healing as decadent as a Medici wedding banquet, but that perfumed air of rusticity is exactly what makes it as appealing as Signor Luigi.
