Food and drink at Aman New Delhi

  • Hotel restaurant The ground-floor Aman Restaurant is a smartly styled, masculine affair with a high vaulted ceiling, mirrored interior and sliding glass doors running the length of one wall. Furnishings are equally sexy, with polished timber, buttery soft leather and muted natural linens. Tuck into Indian and Thai dishes, including bhuna gosht (tender slow-roasted lamb), or pull up a bar stool at the Naoki counter, where hotshot chef Naoki Okumura gives Japanese kaiseki (multi-course) cooking his signature French twist.
  • Dress code Elegantly understated.
  • Top table During the cooler months go alfresco. It's less formal, but dining beneath the trees by candlelight is hard to beat. If the weather is too warm, choose a table for two in one of the alcoves framed by white marble and inlaid with colourful mosaic tiles.
  • Last orders You can dine until 11.15pm; the bar mixes drinks until 12.45am.
  • Room service Available around the clock, offering breakfast, light snacks and main courses. Each floor has its own butler ensuring your every need is met.
  • Hotel bar Located beside the restaurant, the leather-panelled Aman Bar is sunlit by day and cosy and intimate at night. Afternoon tea is served here daily, or swing by for a refreshing sangria come evening.

All rooms sport a private outdoor plunge pool and follow the same contemporary blueprint with subtle nods to Indian traditions, most notably the carved jaali screens that filter sunlight onto the terraces outside and hide the minibar indoors.
