The Dylan Amsterdam was conjured up by Anouska Hempel on the site of a 17th-century theatre, from a magic hat of antiques, minimalist detail and luxury fabric.

- The Manhattan room is fabulously over-the-top. We also loved the La Carmona rooms, in the standard range; the suites with canal views; and the loft suites for something a bit different.
