• Hotel restaurant

  Acclaimed Blue Door Fish sees chef Claude Troisgros riff on a seafood theme, with a menu that honours succulent sushi, fruit de la mer and fish platters, along with the odd steak or lamb dish to keep carnivores happy. Of course, the setting is pure glamor: pristine white linen and leather… Ogle your food while it’s being prepared in the open kitchen at Blue Sea, Delano’s stylish-looking off-lobby sushi and caviar bar. There’s also a casual Mediterranean poolside bistro.

• Top table

  On the terrace at Blue Door Fish, so you can stargaze (and check out the night sky, too…). For the ultimate in romance, book a candlelit poolside cabana for dinner (US$195, plus US$90 a person for the special set menu, excluding drinks.)

• Last orders
