The hotel restaurant focuses on farm-to-table dishes, sourcing nearly all its the ingredients from the on-site gardens or the owners’ nearby farm for Latin American dishes with international touches. The set menu changes daily, but includes home-made cheeses and yoghurts, eggs collected from the on-site chickens and ultra-fresh Chilean seafood in inventive preparations, such as baked bass with fennel and mascarpone sauce. Dishes pair beautifully with bottles from the all-Chilean wine list.

The casual open-air bar pours house-infused liqueurs and snappy takes on South American classics, including a zingy ginger pisco sour.

Last orders

Breakfast, lunch and dinner are served from 8am to 10am, 1pm to 3pm and 8pm to 10pm.

Worth getting out of bed for

The great outdoors seems even greater at Vira Vira. In a 23-hectare nature reserve, the hotel opens out to rolling greens, with a river babbling by and a backdrop of snow-capped mountains. The scenery is not just for show: room rates include excursions with dedicated guides to explore the region via horseback rides, treks, rafting trips and dips into the natural hot springs. Closer to home, the gardens and the owners’ adjacent farm provide nearly all of the ingredients for meals, including eggs harvested from the farm chickens, wheat for house-baked breads, and milk for the cheeses made on-site.

The lodge-like rooms don’t compete with the views. Floor-to-ceiling windows maximise outdoor appreciation, and bare woods and locally woven textiles mirror the rugged terrain.
