Many tourists taste Portugal’s celebrated custard tart, but few get to take them home. Prepare to don whites and get your hands dirty. João will talk you through every step, passing on puff-pastry techniques, such as lamentation. In this great Portuguese bake off, you’ll also learn how to flavour the custard with secret spices for that classic de nata taste. To finish? Taste them with local tipple ginjinha. Saúde!

While other children were playing with Furbies, João was playing with flour. His crib topped a counter in his family’s restaurant and by 12 he could mix a killer sangria. But it was pastry where he really proved himself and, after stints in Spain and London, he returned to Lisbon to helm his namesake Pastelaria Batalha in the heart of Chiado.

A piece of cake: all the action takes place at Pastelaria Batalha, so simply head to João’s family-owned bakery, founded in 1990 and still using many of the same traditional recipes that have been passed down over four generations.
What you'll sample
You’ll get three pies to sample straight out of the oven – or, for those with cast-iron self-control, three to take home. To chase it down, you’ll be served coffee, tea or the local liqueur, ginjinha.
