After years of drinking as an amateur, Fairfax turned professional in 2009 with the launch of Sipsmith – the first distillery to open in London for about 200 years. 10 international gold medals later, and with distribution contracts from Truro to Tokyo, he still hankers after opening his own bar restaurant. But, for the moment, he’s content for someone else to stir the martinis – just as long as they don’t bruise the gin.
