Sextantio is truly a magical place to stay and when there you must go into the mountains for dinner at Paolo's or as it is properly known 'Rifugio Racollo' – it is about 15 minutes' drive up into the mountains from Santo Stefano. Over a glass of wine, we watched the sun go down over the mountains and ate acompanied by the sound of the bells as the cows walked by on their evening trip to the watering hole. We also watched the moon rising. The food is basic but great, good for carnivores – lamb skewers and sausages, but not big on salad. Take a jacket; even in August it turns cool in the evening.
