Poolside
The hotel has a little whitewashed pool – built up from the ground rather than dug into it – surrounded by rough-hewn rocks and offering lovely coastline views.

Our favourite rooms
On the first floor, Suite Torre offers the best views of the golf course and the Adriatic – best enjoyed from its huge private terrace. Suite Massaro is a little smaller, with a small balcony and terrace overlooking the links. All Masseria Cimino’s rooms are decorated in fresh whitewash fashion, draped with loose-weave linen and riddled with nooks and alcoves.
Packing tips
Bring your clubs – the room rates include green fees for the 18-hole golf course opposite, which belongs to the Masseria’s sister hotel.
Also
The hotel provides free bikes, so you can set off exploring the wild sandy beaches of the Puglian coast.

Hotel restaurant
Like the rest of the hotel, Cimino’s rustic restaurant is white, white and white all over, with little painted wood tables and chairs, handmade-style crockery and candles in glass jars completing the farmhouse-kitchen feel. The food suits the decor – a set menu of proper Pugliese pasta dishes and fabulous foccacia, all made with fresh vegetables grown on site.
Dress code
White linens to blend into the background, and natural fabrics only ¬– this is a truly rustic retreat.
Top table
Squirrel yourself away in the corner furtherst from the door for a cosy tête à tête.
Last orders
Dinner’s served late-ish, between 8.30pm and 10pm. The bar opens at noon and shuts around 10pm.
Hotel bar
Drinks are served in the hotel’s lounge area, a cushioned, candelit space full of intimate hidey-holes.

Local restaurants

Puglia is the home of olive oil, orecchiette pasta, and an abundance of sun-ripened vegetables, so expect delicious rustic dishes pretty much everywhere you go. For excellent examples of the typical fare, wend your way through alleys of Ostuni, ‘the white city’, to Osterio Del Tempo Perso (www.osteriadeltempoperso.com), aka ‘the Inn of Lost Time’. Da Tuccino (+39 080 424 1560) in Polignano takes advantage of the region’s coastal seat by serving up innovative reinventions of classic fish and seafood recipes; the raw tuna is a must-try. In Salvelletri itself, La Marea (+39 080 482 9415) has a simple ambience and does excellent seafood, including oysters and sea urchins. Try the gilthead in a salt crust. Set in a mediaevalesque stone-walled dining room, Il Poeta Contadino (www.ilpoetacontadino.it) in Alberobello has a Michelin star.

Worth getting out of bed for

Lecce – Puglia’s most beautiful city – is an hour away by car and makes for an ideal day trip. Stay until the evening to enjoy the passegiata (the traditional dusk sociable stroll) and admire the up-lit golden-stone baroque architecture. The coast is flat and the low stone walls of most buildings ensure uninterrupted views – ideal for exploring by bike; Masseria Cimino can provide one free. The hotel can also arrange horse riding, go-karting or diving expeditions and can organise boat rental if you fancy sailing around the shoreline. Puglia produces the bulk of Italy’s wine – and tastings are easy to arrange, either through the hotel, or try www.stilemediterraneo.it.
