The Dylan Amsterdam was conjured up by Anouska Hempel on the site of a 17th-century theatre, from a magic hat full of wild antiques, minimalist detail, acres of luxury fabric, and lots of money. It is set back off Keizersgracht, a pin-drop-peaceful canal-side main drag in the heart of everywhere you need to be.
