Meals are served in the dining room around a custom-made wooden table and out on the spacious veranda. Watch acclaimed chef Chris Harris whip up dishes with an authentic Australian flavour in the open kitchen, where bush spices and locally grown produce are the stars. Three-course dinners, gourmet barbecues and pizzas and roast meats from an alfresco woodfired oven are all on offer. If you get peckish between meals, help yourself to snacks in the kitchen.
- Dress code This is all about laid-back living. Opt for organic cottons and light linens when the weather’s warm. If it’s cool, throw on a merino-wool jumper.
- Top table In summer, ask to have a table set up under the stars; come winter, bag one of the hotly contested spots by the fireplace.

Our favourite rooms
All of the tents feature a choice of king-size or twin beds, timber decks with chairs and lamp-lit bedside tables. The 10 breezy canvas cabins are grouped together, overlooking lawns and bushland, but with its views of Cunningham Gap and the mountains, Tent 6 is the standout.
Packing tips
Boots that are made for walking; books and magazines for idle flipping. This may be a deal-breaker for some, but you'll need to leave your hair-dryer and straightener at home, as the limited solar power makes this a preen-free zone.
Also
This is an eco-chic take on communal living, with shared bathrooms and a cosy living and dining lodge. Forget TV and internet connection (3G is patchy at best) – a stay here is all about being at one with nature.
