Stefano Manfredi
Italian cuisine evangelist
A chef born in Italy and reared in Australia, Stefano inherited a love of eating and drinking grappa in the morning from his father; the cooking gene came from his mother’s side. He’s run Italian restaurants in Sydney since 1983 and cooked as a guest chef in restaurants and resorts all over the world. He’s no slouch: as well as cheffing, he has a weekly food column in The Sydney Morning Herald and he oversees the kitchen gardens at Manfredi at Bells in the NSW seaside hamlet of Killcare. Most recently, he opened a Milanese osteria in the Star City Casino on Sydney’s waterfront. His friends think he has no life but he wouldn’t swap this one for quids.
